Cooking the way the forest intended.
Before refrigeration, before stainless steel — there was the hearth. Our kitchen returns to that elemental practice: live coals of oak and birch, sea-salt cured over smoke, vegetables blistered against iron still warm from the morning bake.
Each morning, our foragers comb coastal pine and old-growth meadow for what the season has chosen to give. The menu is written that afternoon. By evening, it is fire.
A seat by the fire.
Two seatings each evening. Reservations open eight weeks in advance and are released every Monday at noon. We hold a small allotment for walk-ins at the hearth counter.

The Chef's
Table.
Twelve seats arranged around the hearth itself. A blind tasting written the morning of service, paired and narrated by the chef and sommelier in turn. Available for private dinings and buyouts by inquiry.
